1 onion, chopped
1 pkg (12) PC Blue Menu Extra Lean Turkey Meatballs
1 cup (250 mL) PC Blue Menu Low Fat Pasta Sauce - Mushroom & Garlic
4 Blue Menu Thins - Whole Grain Round White Buns
1 sweet red pepper, diced
1/2 tsp (2 mL) chili flakes (optional)


1. Preheat oven to 375°F (190°C). Line rimmed baking sheet with foil and spray with PC Blue Menu Canola Oil Cooking Spray.
2. Place peppers and onions on one half of prepared baking sheet. Sprinkle with chili flakes, if using. Spray with cooking spray for about 3 seconds. Place meatballs on other half of baking sheet.
3. Bake in centre of oven for 10 minutes. Turn meatballs over and gently stir peppers and onions together. Bake another 10 to 12 minutes or until onions are golden and tender and meatballs are fully cooked.
4. Place sauce in large microwave safe bowl. Cover and microwave on HIGH for 1-1/2 to 2 minutes or until hot and bubbly. Add meatballs, roasted peppers and onions to sauce; stir together. Evenly divide mixture among four buns. Serve immediately, sprinkled with PC Blue Menu 100% Parmesan Grated Cheese, if desired.
