Ingredients

1-1/2 cuos (375 ml) diced, peeled, Yukon Gold potatoes
1 cup (250 mL) PC Small Sweet Peas
1 tbsp (15 mL) olive oil
1 boneless skinless chicken breast (about 230 g), diced
¼ cup (50 mL) 2% milk
1 tbsp (15 mL) unsalted butter
1/2 tsp (2 mL) salt

Instructions

  1. Place potatoes in small saucepan. Add cold water to cover. Bring to a boil; boil for 8 minutes. Stir in frozen peas; boil 4 to 5 minutes more or until vegetables are very tender.
  2. Meanwhile, in nonstick frying pan, heat oil over medium heat; cook chicken, stirring occasionally, for 10 to 12 minutes or until cooked through.
  3. Drain cooked vegetables; transfer to bowl. Add cooked chicken, milk, butter and salt. Using potato masher, mash everything together until chicken is in very small pieces and mixture has taken on a creamy texture. Makes about 2-2/3 cups (650 mL).
  4. To serve, portion 1/3 cup (75 mL) into serving bowl; check temperature before serving to baby. Leftovers can be frozen in single-serve, 1/3 cup (75 mL) amounts.
