Sweet potatoes are a traditional holiday side dish, but are great at any time of year. This big-batch, orangey sweet potato mash is perfect to make if the main course is in the oven so you need to make your side dish on the stove-top.

Ingredients

6 medium sweet potatoes (about 2.4 kg), peeled and cut in 1-inch (2.5 cm) cubes
1 cup (250 mL) 35% whipping cream
1/3 cup (75 mL) PC 100% Florida Orange Juice with Pulp
2 tsp (10 mL) butter
2 cinnamon sticks
1/4 cup (50 mL) finely chopped fresh chives
1/2 tsp (2 mL) sea salt
1/8 tsp (0.5 mL) freshly ground black pepper
2 tbsp (25 mL) grated orange rind

Instructions

  1. Place sweet potatoes in large saucepan. Add cold water to cover. Bring to a boil. Reduce heat to simmer; cook, uncovered, until very tender, about 25 to 30 minutes.
  2. Meanwhile, in small saucepan, combine cream, orange rind and juice, butter and cinnamon sticks. Bring to a boil. Reduce heat to simmer; cook until reduced by one-third, about 5 minutes. Remove cinnamon sticks.
  3. Drain sweet potatoes well. Return to saucepan. Add cream mixture, chives, salt and pepper. Stir well to combine. Garnish with additional chives, if desired.
