2 lb (1 kg) baking potatoes- peeled and cut in 2-inch (5 cm) chunks (about 4 large)
1 cup (250 mL) 2% milk
1 pkg (140 g) PC Soft Unripened Goat's Milk Cheese
3 green onions, thinly sliced
1/4 tsp (1 mL) each salt & freshly ground black pepper


  1. Place potatoes in saucepan with cold, salted water to cover. Bring to a boil. Reduce heat to simmer, cover and cook for 15 to 20 minutes or until potatoes are cooked through. Drain; return to pan.
  2. Add milk, cheese, green onions, salt and pepper to pan. Using potato masher, mash until well mixed.

PC Chef's Tips / For a garlic version, add a few cloves of garlic to the potatoes as you boil them.
