Ingredients

1 pkg (680 g) PC Ruby Fingerling Red Potatoes , scrubbed and cut in half lengthwise
1/2 cup (125 mL) PC Memories Of Argentina Chimichurri Sauce
1/4 cup (50 mL) chopped fresh parsley
2 tbsp (25 mL) chopped fresh mint

Instructions

  1. Preheat oven to 425°F (220°C). Line baking sheet with foil and spray with cooking spray.
  2. In bowl, toss potatoes with half of Memories sauce. Spread in single layer onto prepared baking sheet. Bake in centre of oven for 20 to 24 minutes or until largest potatoes are tender.
  3. Cool for 5 minutes. Transfer to bowl. Toss with herbs and remaining Memories sauce. Serve warm or at room temperature.
