1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 tbsp (15 mL) PC Roast Chicken Seasoning Grinder
1 boneless leg of lamb, tied (about 3 to 4 lb/1.5 to 2 kg)
2 clove garlic, each cut in 6 slivers


  1. Preheat oven to 400 °F (200 °C).
  2. Using small sharp knife, pierce lamb; insert a sliver of garlic. Repeat, spacing piercings evenly and making 12 piercings total. Using fingers, rub oil over lamb. Sprinkle evenly with spice grinder. Place in shallow roasting pan, fat side up.
  3. Roast in centre of oven for 18 minutes per lb (500 g) for medium, or to desired doneness.
  4. Tent with foil. Let stand 15 minutes before carving. Serve garnished with fresh rosemary sprigs, if desired.
