6, cut in bite-sized pieces PC Blue Menu Air Chilled Chicken Thighs - Boneless, Skinless
1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 pkg (450 g) PC Splendido Gemelli
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
1 onion, sliced
2 small zucchini, cut in half lengthwise and thinly sliced
1 bottle (660 mL) Bella Tavola Strained Tomatoes - Plain
1/2 tsp (2 mL) granulated sugar


  1. Sprinkle chicken with salt and pepper. In large nonstick frying pan, heat oil over medium-high heat; brown chicken on all sides. Add onions and zucchini; cook for 3 minutes, stirring frequently, or until onions are softened. Stir in strained tomatoes and sugar. Reduce heat to simmer; cook for 10 minutes.
  2. Meanwhile, in pot of boiling, salted water, cook pasta for 8 to 10 minutes or until tender but firm. Drain.
  3. Divide drained pasta among 6 individual serving bowls. Top each serving with generous ¾ cup (175 mL) sauce.

Chef's Tips

Pass PC Splendido 100% Italian Parmesan Grated Cheese at the table, if desired.

Chicken thighs stay moist and juicy, unlike chicken breasts which can dry out if overcooked.
