Juice of 1 lime
1 can (796 mL) PC Blue Menu Diced Tomatoes
1/2 tsp (2 mL) ground PC Sea Salt & Black Peppercorn Grinder
1/4 cup (50 mL) diced red onion
1/4 cup (50 mL) chopped fresh coriander
7 drained pickled jalapeño rings, finely chopped
1 clove garlic, finely chopped


  1. Drain tomatoes thoroughly, discarding liquid. In bowl, stir together tomatoes, red onion, coriander, jalapeño, garlic, lime juice and grinder. For best flavour, cover and let stand in refrigerator for 1 hour before serving.

Serve with PC Blue Menu Flax Seed Tortilla Chips.
