This dessert ice will raise eyebrows. Like vinegar, black pepper is a friend of many fruits like fresh pineapple-and especially the berries in our PC frozen fruit blend.

Ingredients

1 container (600 g) PC 6-Berry Frozen Fruit Blend thawed (left in juice)
1 1/2 tsp (7 mL) PC Tellicherry Black Peppercorns freshly ground
1 cup (250 mL) granulated sugar
1 cup (250 mL) water
1/2 tsp (2 mL) lime rind freshly grated (optional)

Instructions

  1. Pour fruit (with juices) into food processor and purée until smooth; place in large bowl and set aside.
  2.  In small saucepan, combine sugar and water; bring to boil over medium-high heat. Remove  from  heat; pour over fruit. Add pepper and lime rind (if using); stir to combine.
  3. Pour mixture into square baking pan 8 inch or (2 L); cover and freeze for 3 to 5 hours, stirring with fork once after 2 hours to break up ice crystals. Granita will appear to have slushy ice crystals when ready.
  4. To serve, use ice cream scoop and scrape granita toward you by applying firm strokes. Place into 8 chilled glasses and serve immediately.

Chef's Tips

The key to texture is to scrape during freezing with a fork using sharp, firm strokes.
