Fiesta Quinoa and Black Beans

This hearty main dish has a touch of Mexican flair and makes quinoa a little more fun for the family. It will serve 6 as a side dish.

1 tbsp (15 mL) olive oil
1 onion, diced
1 tbsp (15 mL) PC Garlic frozen chopped
1 tbsp (15 mL) chili powder
2 tbsp (25 mL) tomato paste
2 cups (500 mL) PC Blue Menu Chicken Broth
½ tsp (2 mL) salt
1 box (225 g) PC Organics Quinoa
1 can (19 oz/540 mL) PC Blue Menu Black Beans , rinsed and drained


  1. In saucepan, heat oil over medium-high heat; cook onions and garlic for 2 to 3 minutes, stirring often, or until starting to soften. Add chili powder; cook, stirring, for 30 seconds. Add tomato paste; cook, stirring, for 1 minute. Add broth and salt. Bring to a simmer over medium-high heat. Stir in quinoa and black beans; reduce heat to low, cover and cook for 20 minutes.
  2. Let stand off heat, covered, for 5 minutes. Fluff with fork. Serve garnished with lime wedges and coriander sprigs, if desired.
