Cooking the oats in milk makes this oatmeal ultra-creamy.

Ingredients

1 cinnamon stick
1 cup (250 mL) PC Blue Menu 100% Whole Grain Steel Cut Oats
4 tsp (20 mL) PC Organics Pure Honey
2 1/2 cups (625 mL) water
2 cups (500 mL) skim milk
1/3 cup (75 mL) no name Dried Cranberries
1/4 tsp (1 mL) salt
1/4 cup (50 mL) chopped no name Pecan Halves

Instructions

  1. In saucepan, bring water to a boil. Stir in milk and oats. Return to a boil. Reduce heat to simmer; cook uncovered for 30 minutes, stirring occasionally.
  2. Stir in cranberries; cook another 5 to 10 minutes or until oats are tender. Remove from heat. Stir in honey, salt and cinnamon. Divide among four bowls. Sprinkle each serving with some pecans.

Chef's Tips

Substitute nutmeg for cinnamon.

Toast nuts, if desired.

Make ahead: Cover and refrigerate without nuts for up to 3 days. Take out as much as you want to serve, then reheat stovetop in small saucepan or in microwave, adding a little water to thin as necessary. Garnish with nuts.
