4 PC Blue Menu Air Chilled Boneless, Skinless Chicken Breasts about 1-1/2 lb/750g)
1 bottle (400 mL) PC Indian Butter Chicken Cooking Sauce
Half English cucumber, seeded and cut in 1/4-inch (5 mm) dice (peel on)
1/2 cup (125 mL) chopped fresh coriander
2 green onions, thinly sliced
1 cup (250 mL) PC Blue Menu Finesse Plain Yogurt
1/4 tsp (1 mL) each salt & freshly ground black pepper
1/2 cup (125 mL) PC Peach Chutney Relish


  1. Preheat barbecue to medium. Slice each chicken breast into five long strips. In shallow glass baking dish, marinate chicken strips in 1 cup (250 mL) of sauce for 15 minutes.
  2. In bowl, stir together cucumber, coriander, green onions, yogurt, salt and pepper.
  3. Remove chicken from dish, discarding any marinade left in dish, and place on greased grill. Close lid. Cook for 10 to 15 minutes, turning occasionally, or until cooked through. Brush remaining sauce over chicken and remove from grill.
  4. Serve with PC Peach Relish Chutney and cucumber relish.


Chef's Tips

Serve with cooked PC Indian Basmati Rice, or for an all barbecue meal serve with grilled pita breads.
