Just because it's "chicken" again doesn't mean mealtime has to lack pizzazz. A brush of Memories of smoky tomato-chipotle sauce beefs up this meal-of-a sandwich.

2 PC Blue Menu Air Chilled Boneless, Skinless Chicken Breasts
2 tbsp (25 mL) PC Roasted Garlic Olive Oil
1/2 loaf (175 g) PC French Baguette
1/2 cup (125 mL) PC MEMORIES OF Santa Fe Smoky Tomato & Chipotle Sauce
2 lettuce leaves
1 tomato, thinly sliced
2 sliced red onion


  1. Preheat barbecue or cook in lightly greased grill pan on stove over medium-high heat for 6 to 8 minutes per side or until done.
  2. Place chicken on greased grill over medium-high heat; close lid. Cook for 6 to 8 minutes per side or until cooked through. Meanwhile, cut baguette in half horizontally; brush garlic oil over both sides of both bread portions; grill for 1 or two minutes per side or until golden brown.
  3. Brush cut sides of bread with Santa Fe sauce. Layer bottom portion of bread with lettuce, chicken, tomato and onions. Cover with top portion of bread. Cut in half.

Chef's Tips

For added smoky flavour, dip your sandwich into more of the PC Memories of Santa Fe sauce.
