Lentils contain lutein, a micronutrient needed for eye health, and fibre. Pick through dry lentils for stones before measuring and give them a quick rinse before using. If you have it on hand, PC Kielbasa would make a good substitute for the smokies.

3 tbsp (45 mL) extra virgin olive oil
1 onion, chopped
2 carrots, chopped
1-2/3 cups (400 mL) green or brown lentils
1 bay leaf
½ tsp (2 mL) dried thyme leaves
½ tsp (2 mL) dry mustard
12 oz (375 g) PC Pork & Beef Sausages - Original Smokies , diagonally sliced
1/4 tsp (1 mL) salt
2 tbsp (25 mL) chopped fresh parsley


  1. In large saucepan, heat oil over medium-low heat. Cook onion and carrots, stirring occasionally, for 6 minutes or until softened. Stir in 3-1/3 cups (825 mL) water, lentils, bay leaf, thyme and mustard. Bring to a boil. Reduce heat to simmer; cover and cook for 20 minutes or until lentils are almost tender.
  2. Discard bay leaf. Stir in smokies. Cover and cook for 10 minutes or until lentils are tender but not falling apart. Stir in salt and half of parsley. Serve garnished with remaining parsley.
