Ingredients

2 tsp (10 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 pkg (280 g) PC Blue Menu Wild Albacore Tuna , thawed
½ cup (125 mL) diced fennel
1/3 cup (75 mL) diced red onion
¼ tsp (1 mL) salt
1/8 tsp (0.5 mL) freshly ground black pepper
4 tsp (20 mL) PC Dill fresh frozen chopped
1 tbsp (15 mL) fresh lemon juice
3 tbsp (45 mL) PC Blue Menu Mayonnaise Type dressing
2 PC Blue Menu Thins Multigrain Bagels
4 cups (1 L) PC Organics Baby Spinach

Instructions

  1. In nonstick frying pan, heat oil over medium-high heat. Cook tuna pieces for 2 to 3 minutes per side or until golden on outside and still slightly pink inside. Transfer to plate. Using fork, break into large chunks; set aside.
  2. Return frying pan to medium-low heat. Cook fennel and red onion for 4 to 5 minutes, stirring often, or until tender and golden. Add salt and pepper. Remove from heat. Stir in tuna, dill, lemon juice and 2 tbsp of the (25 mL) mayonnaise.
  3. Briefly toast bagels. Spread with remaining mayonnaise. Place a half on each serving plate. Evenly divide spinach among bagel halves, top each with one-quarter of warm tuna mixture and serve immediately.
