Fattoush is a Middle Eastern vegetable and herb salad that contains toasted bread, usually pita. You’ll need a vegetable grill basket for this grilled version, to keep the smaller veggies from falling through the grill.

6 PC Organics Green Onions , cut in 1-1/2 inch (4 cm) pieces
1 pint (550 mL) cherry tomatoes
2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 pkg (250 g) PC Indian Naan Flatbread
2 tbsp (25 mL) PC Mediterranean Vinaigrette
Half English cucumber
1/2 cup (125 mL) drained PC Olives Whole Kalamata , pitted and cut in half
1/2 cup (125 mL) PC Feta Shredded Cheese
1/2 cup (125 mL) chopped fresh parsley
1/4 cup (50 mL) chopped fresh mint

Instructions

  1. Preheat barbecue to medium heat. Place a vegetable grill basket on grill to preheat for about 10 minutes.
  2. In bowl, toss green onions, tomatoes and half of olive oil. Brush remaining olive oil over naan. Place vegetable mixture in grill basket and naan on the grill. Grill vegetables for 6 to 8 minutes, tossing often with tongs, or until lightly coloured. Grill naan for about 5 to 6 minutes per side or until crispy but not too charred. In large bowl, toss hot vegetables with 2 tbsp (25 mL) vinaigrette. Let naan cool to room temperature, about 15 minutes. Break into bite-sized pieces.
  3. Cut English cucumber half into quarters lengthwise, then slice into 1/4-inch (5 mm) thick slices. Add cucumber, olives, feta, parsley and mint to tomato mixture. Top with torn naan. Drizzle with 1/2 cup (125 mL) vinaigrette. Toss to coat. Serve immediately, as an accompaniment to barbecued foods.

Chef's Tips

Because you are grilling the bread, you can use less-than-fresh bread for this salad.
