Too Good to be Low Fat Chocolate Orange Blancmange

A very British dessert, blancmange is usually made from milk, sugar, vanilla and cornstarch resulting in a white (blanc) pudding. Our blancmange may not be very blanc, but it is very delicious and low fat to boot.

1/2 cup (250 mL) granulated sugar
1/3 cup no name Cornstarch
1/4 cup PC 100% Florida Orange Juice
2 1/2 cups (625 mL) skim milk
1 tsp (5 mL) pure vanilla
4 oz (125 g) PC Organics European Extra Dark Chocolate
1 orange, segmented
1/2 cup fresh raspberries


  1. Place six 1/2 cup (125 mL) ramekins or custard cups on baking sheet. Lightly wet insides with water.
  2. In small bowl, whisk together sugar and cornstarch. Gently whisk in orange juice and 1/4 cup (50 mL) of the milk. Set aside.
  3. In saucepan, bring remaining milk to a boil over medium-high heat. Whisk cornstarch mixture, then whisk into pan along with vanilla. Reduce heat to medium-low; cook for 3 minutes. Whisk in chocolate until melted. Remove from heat. Pour a generous 1/2 cup (125 mL) into each prepared ramekin. Smooth tops with small spatula or back of a spoon. Cool for 15 minutes. Refrigerate uncovered until completely cold, about 2 hours.
  4. To serve, shake each ramekin from side to side to loosen blancmange. Invert each onto small dessert plate. Garnish each plate with orange segments and raspberries.
