A delicious and filling pasta dish, which you can have on the table in about a half-hour. This packs a fibre punch, thanks to the whole wheat pasta and the veggies.

1 pkg (454 g) PC Blue Menu 100% Whole Wheat Pasta - Spaghetti
1 cup (250 mL) PC Blue Menu Low Fat Pasta Sauce - Mushroom & Garlic
1/4 cup (50 mL) PC Blue Menu Light Parmesan Grated Cheese
1 tbsp (15 mL) vegetable oil
1 carrot cut in half lengthwise, then sliced crosswise in thin half-moons
1 sweet red pepper - chopped
1/4 tsp (1 mL) salt & freshly ground black pepper
1 can no name Whole Artichoke Hearts - drained and cut in bite-sized pieces


  1. In large saucepan of boiling, salted water, cook spaghetti for 10 to 12 minutes or until tender but firm. Meanwhile, in large nonstick frying pan, heat oil over medium heat; cook carrots, red peppers, salt and pepper until softened, about 5 minutes. Stir artichoke hearts and tomato sauce into frying pan; cook, stirring, until heated through, about 2 to 5 minutes.
  2. Drain pasta. Place on large serving platter. Pour sauce over pasta. Sprinkle with cheese.

Substitute any of our other PCBM Pasta sauces if you have them on hand, or to taste.
