1/2 cup (125 mL) crumbled, drained PC Goat's Milk Feta Cheese in Brine
1 pkg (560 g) PC Blue Menu Atlantic Salmon Skinless Fillets , thawed
1 pkg (560 g) PC Atlantic Salmon Skinless Boneless Fillets, thawed
1 1/2 cups (375 mL) no name Long Grain Instant Rice
1 pkg (300 g) no name Frozen Chopped Spinach, thawed (not drained)
2 tbsp (25 mL) pine nuts
1/4 tsp (1 mL) each salt & freshly ground black pepper
1/4 cup (50 mL) fresh lemon juice
1/4 cup (50 mL) water


  1. Preheat oven to 350°F (180°C).
  2. In large bowl, stir together rice, spinach, feta, pine nuts, salt, pepper, lemon juice and water.
  3. Place four 12-inch (30 cm) lengths of foil on work surface. Place 3/4 cup (175 mL) rice mixture in centre of each foil piece. Place one salmon fillet on top of each mound of rice. Loosely bring edges of foil up and over salmon; crimp edges to form a loose parcel. Place foil parcels on baking sheet.
  4. Bake in centre of oven for 20 to 25 minutes or until salmon flakes easily when prodded with a fork.

Chef's Tips

Serve garnished with lemon wedges.
