1. In small saucepan of boiling water, cook spinach for 5 seconds or until wilted. Using slotted spoon, transfer spinach to bowl of ice water. Once spinach is chilled, drain. Squeeze out as much excess water as possible. Place spinach in blender with eggs. Puree on high until bright green and smooth, about 10 seconds.
2. Spray two microwave safe 1 cup (250 mL) ramekins with PC Canola Oil Cooking Spray. Divide spinach mixture evenly between two ramekins. Cover ramekins with microwave safe plastic wrap. Microwave on HIGH for 60 to 90 seconds or until egg is cooked through. Meanwhile, toast bagels.
3. Carefully remove plastic wrap from ramekins, as there will be steam trapped inside. Fold a slice of ham onto each bagel bottom and top with green eggs. Spread yogurt spread on bagel tops and close bagels.

Chef's Tips

PC Chef's Tip:  Use PC Blue Menu Whole Grain Bagels- Oatmeal instead. Try with PC Blue Menu Plain Yogurt Spread if you prefer.
