1 1/2 lb (750 g) Brussels sprouts
2 tbsp (25 mL) unsalted butter
1 pkg (150 g) PC Italian Diced Pancetta
2 onions, chopped
1/2 tsp (2 mL) ground PC Sea Salt & Black Peppercorn Grinder
1/2 tsp (2 mL) granulated sugar


  1. Trim Brussels sprouts. Using slicing blade of food processor, finely slice sprouts. You should have 8 cups (2 L). Set aside.
  2. In large non-stick frying pan, melt butter over medium heat. Cook pancetta for 4 to 5 minutes, stirring occasionally, or until lightly browned. With slotted spoon, remove pancetta from pan. Add onion and grinder to pan; cook for 7 to 8 minutes, stirring occasionally, or until softened and golden. Return pancetta to pan. Stir in sprouts, sugar and 1/4 cup (50 mL) water. Increase heat to medium-high. Cook, stirring occasionally, for 6 to 8 minutes or until sprouts are tender, adding another 1/4 cup (50 mL) water if pan gets too dry.
  3. Transfer to serving bowl.
