Green tea is behind the beguiling flavour and icy green sparkle of this Asian- inspired dessert. It’s a winner.

Ingredients

4 bags PC Green Tea
4 cups (1 L) water
1/2 cup (125 mL) granulated sugar
1 tbsp (15 mL) fresh ginger root grated

Instructions

  1. In saucepan, combine water, sugar and ginger. Bring to a boil. Remove from heat. Add tea bags. Cover and let stand 10 minutes.
  2. Strain mixture into 8-inch (2 L) cake pan. Place in freezer. Freeze for 2 hours. Stir. Return to freezer for another 3 hours, or until mixture is slushy but not frozen solid. (If mixture freezes solid, let stand at room temperature for 5 to 10 minutes, then lightly pound with ice cream scoop until slushy.) Spoon into dessert bowls.

 

Chef's Tips

It’s not necessary to peel the gingerroot as it will be strained out.
