1 1/2 cups (375 mL) PC Splendido Shredded Part Skim Stretched Mozzarella Cheese
3 tbsp (45 mL) PC MEMORIES OF Portugal Piri Piri Barbecue Sauce
5 oz (150 g) shaved PC Piri Piri Portuguese Style Extra Lean Chicken Breast - Fully Cooked
10 mini pita breads
2 plum tomatoes, thinly sliced
Sprigs parsley


  1. Preheat broiler.
  2. Using small paring knife, gently split each pita bread into 2 rounds. Place on large baking sheet. Drizzle each round with piri piri sauce. Top each with some chicken, one slice of tomato and some cheese.
  3. Broil 2 to 3 minutes or until golden. Top with small sprig parsley.
