1-1/2 cup (375 mL) PC 100% Pure Pressed Pineapple Juice
2 tbsp (25 mL) PC Honey & Ginger Spread
1 tsp (5 mL) PC Horseradish Dijon
2 tbsp (25 mL) hoisin sauce
1 clove garlic, minced
8 thin boneless pork loin chops, about 1 lb
1 fresh pineapple, peeled, cored and sliced crosswise in 1/2-inch (1 cm) thick rings
Sprigs fresh coriander


  1. Preheat barbecue to medium-high heat.
  2. In small saucepan, stir together pineapple juice, honey spread, hoisin sauce, mustard and garlic. Bring to a boil. Reduce heat to medium; cook uncovered for 10 minutes or until mixture is thickened and reduced by about half. Transfer 1/4 cup (50 mL) of the sauce to small bowl. Put separate basting brushes in small bowl and in saucepan with remaining sauce.
  3. Place pork chops and pineapple slices on grill. Cook for 4 minutes per side, occasionally basting pork chops with sauce in small bowl and pineapple with some of sauce in saucepan, or until pork is cooked through and pineapple is soft and golden. Discard any sauce remaining in bowl, if any. Reserve sauce remaining in saucepan.
  4. Divide grilled pineapple among four plates. Arrange two pork chops on top of pineapple on each plate. Drizzle with remaining sauce. Garnish with coriander sprigs.

Chef's Tips

Honey-Ginger Pineapple Salsa: Omit pork. Make sauce and grill pineapple as per recipe, basting occasionally. Let pineapple cool. Dice pineapple and stir in remaining sauce and 2 tbsp (25 mL) chopped fresh coriander. Serve with PC Garlic & Herb Shrimp Skewers or PC Blue Menu Atlantic Salmon Skewers.
