You don’t want to overcook flank steak, as overcooking toughens it. This cook time will produce lovely tender and pink meat.

1 flank steak, about 2 lb/1 kg
1 cup (250 mL) PC Steak Spice Marinade

Instructions

  1. Place steak and 3/4 cup (175 mL) of the marinade in large resealable plastic bag. Massage bag so steak is completely coated with marinade. Chill for 2 hours.
  2. Preheat barbecue to medium-high heat.
  3. Place steak on greased grill, discarding bag and any marinade left in it. Cook steak with lid up for 4 to 6 minutes or until grill marked. Turn steak; cook for another 4 to 6 minutes, occasionally brushing with remaining 1/4 cup (50 mL) marinade, or until cooked to desired doneness. Transfer to cutting board. Tent with foil; let stand 10 minutes.
  4. Thinly slice steak across the grain. Serve with horseradish mashed potatoes, if desired.

 

 

Chef's Tips

Look for the lines on the meat surface- that is the grain of the meat. Slicing along the grain makes the meat chewier in the mouth, while slicing across the grain with your knife at a 90-degree angle to the grain enhances tenderness- like magic!
