Cooking one thick pancake in the oven is less fussy than frying individual pancakes in batches on the stove-top. Everyone gets hot pancakes and can eat at the same time.

Ingredients

3 tbsp (45 mL) PC Blue Menu Celeb Margarine - Original
3 medium apples, peeled, cored and thinly sliced
4 PC Blue Menu Om├ęga-3 Eggs - Large
1 cup (250 mL) 2% milk
2/3 cup (150 mL) PC Blue Menu Whole Grain Pancake and Waffle Mix
1/3 cup (75 mL) packed brown sugar
1 tsp (5 mL) vanilla
1/2 tsp (2 mL) baking powder
1/4 tsp (1 mL) cinnamon

Instructions

  1. Preheat oven to 425?F (220?C).
  2. Add margarine to 10-inch (25 cm) ovenproof frying pan; place in oven for about 2 minutes or until margarine melts. Remove from oven; brush margarine over entire bottom and up side of pan. Layer apples over bottom of pan; return to oven and bake for about 20 minutes or until softened.
  3. Meanwhile, in blender, combine eggs, milk, pancake mix, half of the brown sugar, vanilla, baking powder and cinnamon; blend until smooth. Pour batter evenly over apples, covering them entirely; sprinkle with remaining brown sugar. Return to oven; bake for about 20 minutes or until puffed and golden brown. Cut into 8 wedges.

Chef's Tips

Serve with a dollop of PC Greek Yogurt with Honey or sprinkle with icing sugar.
