1 can (540 mL) PC Organics Chickpeas
2 tbsp (25 mL) PC Blue Menu Just Almonds Almond Butter - Smooth
1 tsp (5 mL) PC Blue Menu Roasted Garlic Seasoning Blend
4 PC Blue Menu ancient grains whole grain Tortillas
4 leaves PC Organics Romaine Lettuce Hearts , shredded
3 tbsp (45 mL) fresh lime juice
1 sweet red pepper, thinly sliced
1 carrot, shredded


  1. In bowl of food processor, place chickpeas, lime juice, almond butter and garlic seasoning. Pulse until mixed but still chunky. Add 1/2 cup (125 mL) water; pulse until blended but still a bit chunky.
  2. Place tortillas flat on work surface. Spread each with 1/3 cup (75 mL) hummus. Save remaining hummus for another use. At one end of each tortilla, layer one-quarter of red peppers, one-quarter of lettuce and one-quarter of carrot. Roll up tightly. Cut each wrap in half on the diagonal.



Chef's Tips

Substitute your favourite PC Blue Menu Tortilla.

Instead of using filling in a wrap, place a scoop on top of greens for a salad.
