Ingredients

1/3 cup (75 mL) no name Pine Nuts
1 cup (250 mL) PC Organics Chicken Broth - Ready to Use
1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 pkg (160 g) PC Moroccan-Spiced Couscous
1/3 cup (75 mL) no name Sultana Raisins
1/3 cup (75 mL) chopped no name Dried Apricots
2 green onions, thinly sliced

Instructions

  1. In frying pan set over medium-low heat, toast pine nuts for 4 to 5 minutes, stirring occasionally, or until golden. Set aside.
  2. Place broth in saucepan. Bring to a boil, covered. Remove from heat. Stir in olive oil, couscous, raisins and apricots. Cover. Let stand for 5 to 6 minutes.
  3. Using two forks, fluff couscous. Mix in pine nuts and green onions.

 

 

Chef's Tips

Use slivered almonds in place of pine nuts.

Use your favourite dried fruit- try dried cranberries and/or cherries.
