We gave this traditional Jewish dish a sweet twist by adding apple to the usual potato-onion mixture, instead of serving with applesauce later. Yogurt makes a healthier choice than sour cream for dolloping on. We made ours sit-down appetizer size; for passed hors d’oeuvre-size portions, form mixture into thirty-two 1 1/4-inch diameter patties and fry for 2 to 3 minutes per side or until browned and cooked through.

Ingredients

1 tbsp (15 mL) olive oil
1 large white onion, chopped
1 egg, lightly beaten
4 PC Allian Idaho Potatoes ,peeled, grated and squeezed dry
2 PC Ambrosia Apples , peeled, cored, grated and squeezed dry
2/3 cup (150 mL) cream cheese
1/3 cup (75 mL) shredded Cheddar cheese
2 tbsp (25 mL) all-purpose flour
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
1/2 cup (125 mL) olive oil
2 tbsp (25 mL) chopped fresh chives
1/4 cup (50 mL) PC 2% Greek Yogurt - Plain

Instructions

  1. In large nonstick frying pan, heat 1 tbsp (15 mL) oil over medium heat; cook onion for 8 to 10 minutes or until browned and soft. Transfer to large bowl to cool.
  2. To cooled onions, add egg, potatoes, apples, cream cheese, Cheddar, flour, salt and pepper. Using your hands, mash together until evenly combined. Form mixture into 16 equal patties each about 2-1/2 inches (7 cm) in diameter.
  3. In clean large nonstick frying pan, heat ½ cup (125 mL) oil over medium heat. In batches, add the patties, reduce heat to medium-low and cook for 5 to 7 minutes per side or until browned and cooked through. Transfer to paper towel-lined plate. Bring oil back up to medium heat between batches.
  4. Serve latkes warm with a dollop of yogurt, sprinkled with chives.

Chef's Tips

Place grated apples and potatoes in clean tea towel to squeeze all the moisture out; mixture should be crumbly and dry.
