Crispy Calamari Sandwich with Chipotle Mayo

Starring our crispy calamari, this is reminiscent of a New Orleans po’boy sandwich. Messy and delicious! Use some shredded lettuce in place of or in addition to the cucumber, if you like.

1/4 cup (50 mL) thinly sliced red onion
1 box (300 g) PC Crispy Calamari
1/2 cup (125 mL) PC Mayonnaise - Made with Whole Eggs
1/4 cup (50 mL) PC Smokin' Stampede Beer & Chipotle Barbecue Sauce Naturally Flavoured
2 PC Gigantico Burger Buns
1/2 cup (125 mL) thinly sliced English cucumber (skin on)


  1. Preheat oven to 425°F (220°C).
  2. Place calamari on baking sheet in single layer. Bake in centre of oven for 8 to 10 minutes, turning half way through, or until crispy. Let rest 1 minute.
  3. In small bowl, stir together mayonnaise and barbecue sauce. Place half a bun, cut side up, on each of four dinner plates. Spread 1 tbsp (15 mL) mayo mixture over each bun; top with cucumber, onion and calamari, dividing evenly among buns. Drizzle remaining mayo mixture over calamari. Serve with lime wedge and green salad, if desired.

Chef's Tips

If you like, use four buns and give everyone a whole one so you can pick it up with your hands to eat it.
