Ingredients

8 oz (250 g) PC Blue Menu Lean Italian Pork Sausages
1 onion, chopped
2 stalks celery, chopped
1 can (540 mL) PC Blue Menu Six Bean Medley , rinsed and drained
1 1/2 cups (375 mL) PC Blue Menu Diced Tomatoes
1 cup (250 mL) frozen corn
2 cups (500 mL) PC Blue Menu 8 Vegetable Cocktail
2 cups (500 mL) PC Blue Menu Chicken Broth
1/2 tsp (2 mL) dried oregano
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
1 tsp (5 mL) balsamic vinegar

Instructions

  1. Spray large saucepan with cooking spray and heat over medium-high heat. Remove casings from sausages and discard casings. Add sausage, onion and celery to saucepan; cook, breaking up sausage with the back of a spoon, for 5 minutes or until pork is no longer pink inside and vegetables are softened.
  2. Stir in beans, diced tomatoes, corn, vegetable cocktail, broth, oregano, salt and pepper. Bring to a boil. Reduce heat to simmer; cook, covered, for 10 minutes or until vegetables are very tender. Stir in balsamic vinegar.
