As far as tossed salads go, this one couldn’t be simpler. Just vegetables, olives and feta tossed together with tzatziki as the “dressing.” Great with souvlaki.

2 vine-ripened tomatoes - chopped
1 English cucumber - diced
1 red onion - thinly sliced
1 sweet red pepper - cut in 1/2-inch (1 cm) squares
12 PC Super Colossal Pitted Black Olives cut in half
1 cup (250 mL) tzatziki
1 cup (250 mL) PC Goat's Milk Feta Cheese in Brine
salt & freshly ground black pepper


  1. In large bowl, combine tomatoes, cucumber, onion, red pepper and olives. Stir in tzatziki and feta cheese. Season to taste with salt and pepper.
  2. Chill for 15 to 20 minutes or just until slightly chilled.

Chef's Tips

For best flavour and appearance, prepare salad close to serving time.
