Grilled Artichokes with Feta

Grilled artichokes are an Italian favourite, but cleaning fresh artichokes is time-consuming. Canned whole artichoke hearts take the work out of this summery side dish.

Ingredients

2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 tbsp (15 mL) PC Salad & Vegetable Seasoning Grinder ground
1 tub (175 g) PC Crumbled Goat's Milk Feta Cheese
2 cans (each 14 oz/398 mL) no name Whole Artichoke Hearts, drained
2 tomatoes, sliced
2 tbsp (25 mL) chopped fresh mint

Instructions

  1. Preheat barbecue to medium heat.
  2. In large bowl, stir together olive oil and spice grinder. Add artichoke hearts; gently stir to coat.
  3. Place artichokes on greased grill; heat, turning occasionally, until grill-marked and hot, about 5 to 6 minutes.
  4. Line serving platter with tomatoes. Sprinkle with half of feta. Mound grilled artichoke hearts on top of cheese. Top with remaining feta. Sprinkle with mint. Serve with lemon wedges, if desired.

Serve with PC Lamb Burgers.
