Ingredients

2 tbsp (25 mL) no name Sour Cream
1/4 tsp (1 mL) finely grated lemon rind
1 pkg (150 g) PC Bay of Fundy Smoked Atlantic Salmon , thawed
16 PC Original Rich & Flaky Crackers
1/2 tsp (2 mL) drained capers
Dill sprigs

Instructions

  1. In small bowl, stir together sour cream and lemon rind.
  2. Slice salmon slices in half horizontally. Roll each half into a coil or rosette.
  3. Place a small dollop of sour cream mixture on each cracker. Top with a smoked salmon rosette, one or two capers and a small sprig of dill.

Chef's Tips

Most packages of smoked salmon have 8 slices; if there are more, use more crackers to make more bites.
