Grilled Mediterranean Chicken Sandwich

Basil and tomatoes are the essence of summer, captured in this crusty chicken sandwich. For a crowd, double the recipe, using the whole baguette and one 300 g pkg of our PC Soft Unripened Goat’s Milk Cheese.

1 cup (250 mL) loosely packed fresh basil
Pinch each salt & pepper
1 pkg (140 g) PC Soft Unripened Goat's Milk Cheese
1 PC French Baguette
1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
6 oz (175 g) PC Deli Sliced Mediterranean Chicken Breast
1 clove garlic peeled and cut in half
1 tomato, cut in 6 slices


  1. Preheat barbecue to medium heat.
  2. Mix goat cheese and basil.
  3. Cut baguette in half crosswise. Save one half for another use. Cut other half in half horizontally. Drizzle cut sides with olive oil. Place on greased grill, oiled side down. Cook for 2 to 3 minutes or until lightly toasted. Remove from grill; rub cut sides with garlic clove. Spread goat cheese mixture over cut side of bottom piece of baguette. Top with sliced chicken, then tomato. Sprinkle with salt and pepper. Place baguette top on sandwich. Press down gently. Cut into three portions to serve.


Chef's Tips

Short cut the garlic step by substituting our PC Roasted Garlic Olive Oil for the extra virgin.
