1 cup (250 mL) water
1 egg
2 tbsp (25 mL) PC 100% Pure Safflower Oil
1 pkg (480 g) PC Organics Muffin Mix - Cornmeal
1/4 cup (50 mL) PC Organics Wild Blueberry Fruit Spread


  1. Preheat oven to 425° F (220° C). Spray 12-cup muffin tin with PC Blue Menu Canola Oil Cooking Spray.
  2. In bowl, blend water, oil and egg. Stir in muffin mix, breaking up large lumps. Mix until all ingredients are blended, but do not over-mix. Spoon batter evenly among prepared muffin cups, filling about 3/4 full. Dollop 1 tsp (5 mL) spread in centre of each muffin.
  3. Bake in centre of oven for 15 to 17 minutes. Cool muffins in tin on wire rack for 5 minutes, then transfer to cooling rack.

Chef's Tips

Individually wrap. Pack into backpacks, or freeze for later use.
