Salsa-Sweet Potato Soup

This reddish-orange soup will liven up the dinner table. Substitute a spicier PC salsa, if you prefer.

2 onions, chopped
2 tbsp (25 mL) PC Roasted Garlic Olive Oil
1 cup (250 mL) PC Salsa - Extra Mild
2 cups (500 mL) PC Lightly Buttered Flavour Sourdough Croutons
6 cups (1500 mL) chicken stock
3 large sweet potatoes (about 2 lb/1 kg), peeled and cut in 1/2 in. (1 cm) cubes
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
2 tbsp (25 mL) fresh lime juice
1/4 cup (50 mL) coriander leaves


  1. In saucepan, heat oil over medium heat; cook onions 5 to 10 minutes or until soft and translucent. Stir in stock, sweet potatoes, salt and pepper. Bring to a boil. Reduce heat to simmer, cover and cook for 20 minutes or until sweet potato is tender. Remove pan from heat. Stir in salsa.
  2.  In batches, puree soup in blender until smooth. Return soup to saucepan. Gently reheat over medium heat until hot but not boiling. Stir in lime juice.
  3. Serve garnished with croutons and coriander leaves.


Chef's Tips

Cover the blender lid with a folded tea towel as you puree, to prevent burns if any soup splashes up through the lid.
