This easy, no-cook soup is perfect for a hot summer day. Add bread and some fresh fruit for a lunch or light dinner.

1/4 tsp (1 mL) each salt & freshly ground black pepper
1 cup (250 mL) PC Lightly Buttered Flavour Sourdough Croutons
1 tbsp (15 mL) PC Spicy Herb & Pepper Olive Oil
1 English cucumber, cut in chunks (skin on)
Half small red onion, cut in chunks
1 bottle (660 mL) Bella Tavola Strained Tomatoes - Plain
1/4 cup (50 mL) chopped fresh coriander
1 tbsp (15 mL) fresh lime juice


  1. Place cucumber and onion in food processor; process until coarsely chopped. Add strained tomatoes, coriander, lime juice, salt and pepper; process for about 1 minute or until mixture is uniform but not smooth. Add 2 cups (500 mL) water; pulse on and off three or four times or until completely mixed in. Transfer to a bowl. Cover with plastic wrap and chill for 1 hour.
  2. Ladle into six soup bowls. Top with croutons and drizzle with oil. If desired, garnish with dollop of sour cream.
