Savoury tapenade makes a delicious topping for goat cheese toasts. Great to serve with drinks at a cocktail party.

1 PC French Baguette
2 tbsp (25 mL) PC Roasted Garlic Olive Oil
1 pkg (300 g) PC Soft Unripened Goat's Milk Cheese
1/2 cup (125 mL) PC Black Olive Tapenade
1/4 cup (50 mL) PC Sliced Sweet Roasted Red Peppers cut in 1/2-inch (1 cm) lengths


  1. Preheat oven to 425°F (220°C).
  2. Slice end of baguette and discard. Slice 24 1/2-inch (1 cm) pieces from baguette. Save remaining baguette for another use. Place bread on rimmed baking sheet. Lightly brush both sides of baguette slices with oil. Bake in centre of oven for 5 minutes or until crisp and golden.
  3. Using unflavoured dental floss, cut 24 thin slices of cheese each about 1/8-inch (3 mm) thick, cutting straight down through goat cheese log. Save remaining cheese for another use. Place a cheese round on top each toasted bread slice. Top each with 1 tsp (5 mL) tapenade. Place a piece of red pepper on top of each and serve.


Chef's Tips

Try with the PC Whole Grain Baguette to increase fibre.
