Ingredients

1/4 cup (50 mL) no name Sliced Almonds
1 pkg (142 g) PC Organics Baby Spinach
2 cups (500 mL) quartered strawberries
1 cup (250 mL) blueberries
1/3 cup (75 mL) PC Blue Menu Lemon Poppy Seed Dressing
1/4 cup (50 mL) crumbled PC Soft Unripened Goat's Milk Cheese

Instructions

  1. In small frying pan set over medium heat, toast nuts for 6 to 8 minutes, stirring occasionally, or until golden and fragrant. Set aside.
  2. In large bowl, stir together spinach, strawberries and blueberries. Add dressing; toss to coat. Transfer to serving platter. Crumble goat cheese over top and sprinkle with almonds. Serve immediately.

 

Chef's Tips

Substitute crumbled goat cheese with crumbled feta cheese, if you prefer.
