1/2 cup (125 mL) PC Caesar Dressing
1/3 cup (75 mL) PC Splendido Grated Parmesan Cheese - 100% Italian
7 slices, chopped PC Bacon - Fully Cooked
1 cup (250 mL) PC Lightly Buttered Flavour Sourdough Croutons
2 baking potatoes scrubbed


  1. Microwave potatoes on HIGH for 6 minutes. Turn and microwave another 6 minutes or until tender when pierced with the tip of a knife. Cool slightly.
  2. Cut in half lengthwise. Scoop out flesh, being careful not to tear potato skins. In bowl, mash cooked flesh with dressing, cheese and bacon. Stuff back into potato skins. Sprinkle evenly with croutons. Microwave on HIGH for 2 minutes or until heated through. (Alternatively, wrap individually in foil and reheat on barbecue.)


Chef's Tips

A package of PC Fully Smoked Bacon contains two pouches, each with 7 slices. Store the unopened pouch in the cupboard for another use.
