Ingredients

1 lb (500 g) PC Pulled Pork Sauced in PC Smokin’ Stampede Sauce
1 sweet yellow pepper, finely chopped
1/3 cup (75 mL) finely chopped red onion
1 cup (250 mL) finely shredded red cabbage
2 tbsp (25 mL) sour cream
1 tbsp (15 mL) fresh lime juice
1/4 tsp (1 mL) salt
1 pkg (272 g) PC Blue Menu Flax whole grain Tortillas
1/3 cup (75 mL) fresh coriander leaves

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Place pulled pork in small roasting pan. Heat uncovered until hot, about 12 to 15 minutes, stirring once. Meanwhile, in bowl, stir together cabbage, pepper, onions, sour cream, lime juice and salt.
  3. Wrap tortillas in paper towel. Place on plate. Microwave on HIGH for 1 minute.
  4. To assemble, divide pork, then slaw among tortillas. Top with coriander and fold in half.
