Ingredients

1 cup (250 mL) PC Organics Long Grain Brown Rice
4 tsp (20 mL) PC 100% Pure Canola Oil
1 tbsp (15 mL) PC Fresh Frozen Chopped - Ginger
2 tsp (10 mL) PC Garlic frozen chopped
1 pork tenderloin, fat trimmed, cut in 1/2-inch (1 cm) thick slices (about 1 lb/500g)
1 sweet red pepper, thinly sliced
1 bunch green onions, trimmed and sliced in 2-1/2 inch (6 cm) lengths
1 cup (250 mL) snow peas, strings removed
2 tbsp (25 mL) PC Naturally Brewed Soya Sauce
2 tsp (10 mL) PC Pure Sesame Oil

Instructions

  1. Rinse rice under cold running water. In saucepan, combine drained rice and 2 cups (500 mL) water. Bring to a boil. Reduce heat to simmer, cover and cook for 30 to 40 minutes or until liquid is absorbed. While rice cooks, make stirfry.
  2. In wok or large frying pan, heat oil over medium-high heat. Stirfry ginger and garlic for a few seconds or until fragrant. Add pork; stirfry for 2 to 3 minutes. Add red pepper, green onions and snow peas; stirfry for 1 minute. Add soya sauce and sesame oil; stirfry for 1 to 2 minutes or until vegetables are tender-crisp and pork is cooked through.
  3. Divide brown rice evenly among four bowls. Top with stirfry. If desired, serve garnished with sesame seeds.
