Instead of the usual ground meat, this easy family supper features our fully cooked tender pork roast with its delicious gravy.

1 PC Mediterranean Pork Loin Roast
1 pkg (156 g) PC Taco Shells
1 1/2 cups (375 mL) PC Tre Formaggi Shredded Italian Cheese
1 1/4 cups (300 mL) PC Salsa - Mild
1 1/2 cups (375 mL) shredded lettuce


  1. Preheat oven to 400°F (200°C).
  2. Remove pork from sauce. Slice pork into 1/4-inch (5 mm) thick slices. Stack a few slices at a time; cut into 1/4-inch (5 mm) strips, then cut strips into 1/4-inch (5 mm) cubes. Place pork in 8-inch (2 L) square glass baking dish. Add sauce. Bake in centre of oven until bubbling, about 15 to 20 minutes.
  3. Place taco shells in single layer on baking sheet. Bake 3 to 4 minutes.
  4. Spoon some pork into each taco shell. Top with shredded cheese, salsa and lettuce.



Chef's Tips

Serve with sour cream and guacamole, if desired.

Substitute your favourite PC salsa.

For a neater presentation, fill tortilla wraps instead of taco shells.
