Ingredients

4 tsp (20 mL) canola oil
4 cloves garlic, minced
1 hot red chili pepper, seeded and finely chopped
1 pkg PC Blue Menu Extra Lean Ground Chicken
1 can (14 oz/398 mL) no salt diced tomatoes
1 sweet red pepper, thinly sliced
1 pkg (454 g) Medium-Firm Tofu, drained, patted dry and cut in 1/2-inch (1 cm) cubes
2 tbsp (25 mL) soy sauce
4 green onions, finely chopped

Instructions

  1. In large frying pan or wok, heat oil over medium-high heat; cook garlic and chili for 30 seconds, stirring. Add chicken; cook, breaking up chicken until browned, about 5 minutes. Stir in drained tomatoes, pepper, tofu and soy sauce. Cook, stirring, until tofu absorbs all liquid, about 6 minutes. Stir in green onions; cook for 2 minutes.
