1 bunch PC Organics Broccoli
2 stalks PC Organics Celery Hearts thinly sliced
1 can (540 mL) PC Organics Chickpeas rinsed and drained
2 PC Organics Green Onions thinly sliced
1/2 cup PC Organics Vinaigrette - Italian


  1. Cut ends off broccoli stems and discard. Cut crowns off stems and divide crowns into florets. Peel stems and slice thinly. In large pot of boiling, salted water, cook broccoli florets and stems for 2 minutes or until tender-crisp. Drain. Rinse under cold running water. Drain thoroughly.
  2. In large bowl, mix broccoli, celery, chickpeas and green onions.
  3. Divide salad among eight salad plates. Drizzle 1 tbsp (15 mL) vinaigrette over each serving. Serve with grilled salmon or chicken, if desired.

Chef's Tips

Substitute PC Organics Ranch Salad Dressing, if desired.
