1 1/2 lb (750 g) PC Blue Menu Air Chilled Boneless, Skinless Chicken Breasts (about 4), cut in 1/2-inch (1 cm) thick strips
1 jar (700 mL) PC Blue Menu Tomato & Basil
1 can (398 mL) PC Super Colossal Pitted Black Olives
1/2 cup (125 mL) PC Roasted Red Pepper Dip
1/4 tsp (1 mL) freshly ground black pepper
1 bunch green onions, chopped


  1. Preheat oven to 400° F (200° C).
  2. In bowl, stir together chicken strips, pasta sauce, olives, dip and pepper. Pour into 13 x 9-inch (3 L) glass baking dish.
  3. Bake uncovered in centre of oven for 35 to 40 minutes or until chicken is cooked through. Serve sprinkled with green onions. Serve on rice, if desired.
