Thai cooks can carve tropical foods into works of art. Pairing tropical sherbet with fresh fruit requires less effort, and the colour play makes it equally dazzling.

Ingredients

1/2 cup (125 mL) loosely packed fresh mint
8 scoops PC Blue Menu Mango Sherbet
2 mangos peeled and sliced
2 cups (500 mL) strawberries sliced

Instructions

  1. Place two scoops of sherbet into each of four dessert dishes. Arrange sliced mango and strawberries around sherbet. Garnish with mint.

Chef's Tips

To slice a mango, cut a vertical slice from either side of the large flat pit. Remove peel and cut flesh into thin slices. Chop remaining flesh.
