3/4 cup (175 mL) PC MEMORIES OF Dad's Grill, Maple, Apple & Beer Sauce
3 tbsp (45 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
2 large sweet potatoes, peeled and cut in 1-inch (2.5 cm) cubes


  1. Preheat oven to 425°F (220°C).
  2. In large bowl, stir together sweet potatoes and Memories sauce. Add olive oil, salt and pepper; toss to coat. Place in shallow roasting pan or glass baking dish in single layer.
  3. Bake in centre of oven for 25 minutes. Turn potatoes; bake another 20 to 25 minutes or until browned and potatoes are tender when pierced with tip of sharp knife.

Chef's Tips

Sweet potatoes can be roasted up to 1 day ahead of serving. Refrigerate. Reheat in microwave.
