Ingredients

1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1/4 cup (50 mL) PC Roasted Garlic Mayo Sandwich Spread
4 new potatoes, scrubbed (about 1.5 lb/750 g)
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) black pepper
1/2 cup (125 mL) finely chopped fresh basil

Instructions

  1. Preheat barbecue to medium heat. Slice potatoes 1/4-inch (5 mm) thick; toss with oil. Place on greased grill. Cook for 7 to 9 minutes per side, sprinkling with salt and pepper, or until potatoes are tender and golden brown. Overlap on serving platter.
  2. Mix garlic sauce and basil. Drizzle over potatoes. Serve warm or at room temperature.
